DRIED APRICOTS

 

 

Apricot Cheese Balls
200 g packaged cream cheese, softened.
1 cup toasted sunflower seeds
1/2 cup Sunbury Park Dried Apricot Mince
Method:
Beat cream cheese in small bowl until soft and creamy. Add sunflower seed and apricots and mix well. Roll tsps of mixture in small balls and refrigerate until firm. Serve on a plate, garnish with lettuce and orange rind. Can be made into one big ball and served with cracker biscuits.

Sunbury Muffins

1 cup flour
100 g melted butter
1/2 cup muesli
1/2 cup Sunbury Park Dried Apricot Mince
1 egg beaten lightly
1/4 cup bran
1/2 cup sugar
1/2 tsp Baking Soda
Pinch salt
1 cup mashed banana or stewed apple or peach
Method:
Mix the dry ingredients. Add rest of ingredients. Cook at 175c for 20 mins. Serve dusted with icing sugar or cool and butter.

(No Bake) Apricot Fudge Cake
100g Butter
3 tbsp brown sugar
1/3 tin condensed milk
1 pkt crushed wine biscuits
1 cup finely chopped Sunbury Park Dried Apricots
Method:
Steam dried apricots 5-10 minutes until soft. Melt butter, sugar and condensed milk over a low heat, mix in apricots and biscuits. Press into a lightly greased sponge roll tin and sprinkle with coconut. Refrigerate until firm, then cut into squares.

Sunbury Apricot Snack Bars
1/2 cup Toasted Sesame Seeds
1/2 tsp cinnamon
½ cup Raisins
1/2 tsp Baking Soda
3/4 cup softened Butter
1 cup rolled oats
1 egg
1 cup packed brown sugar
1 cup Sunbury Park Dried Apricot Mince
1 cup flour Cream butter, sugar and egg until light and fluffy.
Method:
Stir flour, salt, baking soda and cinnamon into butter mixture until well mixed. Add oats, apricots, toasted sesame seeds and raisins. Mix well. Bake in a greased baking tin for 25 minutes at 175c. Cool in tin and cut into bars.

Dried Apricot Mince Microwaved Jam
Make in two separate lots:
1 lb Sunbury Park Dried Apricot Mince and 3 pints water (soak over night).
Method:
Cook half this quantity for 10 minutes on high. Add 1 1.5 lbs of sugar (3lbs in all) and the juice of a lemon (2) and cook on high 12 - 15 minutes. Bottle.

Dried Apricot Mince Loaf
1 cup Sunbury Park Dried Apricot Mince
1 cup sugar
1/2 tsp Baking soda
50g butter
1/2 tsp Baking Powder
1 egg
2 cups flour
Method:
Soak apricots in 1 cup water (made up with juice of orange if desired) until soft then add butter, sugar and baking soda and bring to boil over medium heat, stirring gently. Boil until fruit is soft, then cool, before adding beaten egg, sifted flour and baking powder. Mix well, turn into loaf tin and bake 170 deg. c for 1 hour.

Tangy Fruit Loaf
Soak 3/4 cup Sunbury Park Dried Apricot Mince and 1 cup currants/sultanas in 1 cup of hot tea mixed with 1 cup of brown sugar for 1/4 hr or more. Beat 1 egg and mix in with fruit mixture when cold. Stir in 2 cups of self raising flour. Cook 180c for about 35 minutes.
